Quinoa and Beans


After 2 months of fantastic honeymoon and new-city celebratory eating, we've been trying to reign in our food expenditures juuust a bit. I know cooking at home can be a great way to save, and right now I have plenty of extra time, so I thought I'd give "homecooked delicious" a try! My first menu consisted of orange-glazed chickencaramelized onion & thyme tart, and carrot & fennel soup with black oil. Weighing in at just over $100 worth of groceries, this meal was absolutely delicious, but in no way "reigning it in". Time for a little help from my good friends bulk beans and bulk grains!

Quinoa & Kidney Bean Burgers

  • 2 cups kidney beans, rinsed and drained
  • 1/2 cup cooked quinoa
  • 1/2 cup crushed tortilla chips
  • 1/2 cup minced white onion
  • 1 large clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp chili flakes
  • 1/4 tsp chipotle chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp ground cumin
  • 1/4 tsp cayenne
  • 1 egg
  • 3 tbs olive oil

Mash the beans with a fork into a paste-like mixture.
Mix the quinoa, tortilla crumbles, onion, garlic, various spices, and egg into the beans.
Form the black bean mixture into 5 patties.
Heat the olive oil in a large skillet.
Cook the patties in the hot oil until heated through, 2 to 3 minutes per side.
Fix yourself a delicious burger!
