Homemade Lära Bars

Homemade lära bar making (puréed dates+cashews) is easy, relatively not super messy, and DEEELICIOUS. I took the time to individually wrap them each in waxed paper to save for snacks at work…. but we ate them all before the weekend was over!

Homemade Lära Bars
(Recipe adapted from Use Real Butter)

1 1/4 cups medjool dates, pitted
1 1/2 cups cashews

Place dates in a food processor and pulse until a gooey semi-paste has formed (you want some bits of fruit, but not huge pieces). Empty into a large mixing bowl. Put the cashews in the food processor and pulse to coarse bits, but not a powder. Empty the chopped cashews into the mixing bowl with the date-goo, knead together until combined and evenly distributed. Press the mixture into the bottom of an 8-inch or 9-inch square pan to about 1/2-inch thickness, and refrigerate for 30 minutes. Slice to desired size and enjoy!

Invitation Reminiscing

Chatting with our guests from Vancouver the other night made me think back to the awesomeness that was our hand-stamped wedding invitation suite. I'm still so proud of the way they turned out :)

Blanca Lake, WA

This past Saturday, Brittany and I took a "ladies hike" (which ended up being the most strenuous hike I've done this season) up to Blanca Lake. The first 3 miles of switchbacks through the trees were buggy, steep, and all around pretty terrible... but the view at the end was totally worth it!

Carrot & Quinoa Muffins

Today I experienced a rare opportunity for a lazy morning and decided to use it for something I haven't done in a while: baking! I’ve been wanting to make these carrot & quinoa muffins for forrrreverrr, and we even had quinoa AND carrots in the house at the moment… a clear thumbs up from the universe. Moist, good texture, and carrot-y but not too sweet, I would definitely recommend and make these again!


Carrot & Quinoa Muffins
(Adapted from Garden of Eden)

1 cup cooked quinoa
1 cup sugar
1 1/2 cup all-purpose flour
1 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter
1/2 cup non-fat Greek yogurt
1 tsp vanilla extract
2 eggs, beaten
1 cup loosely-packed, grated carrots
1/2 cup toasted walnuts, chopped

Preheat the oven to 350F. Grease or line a muffin tin with paper liners and set aside. (Or go crazy and use a mini bundt pan like I did!) In a large bowl, mix together quinoa, sugar, flour, baking soda, and salt. In a small bowl, mix together the butter, yogurt, vanill…

Following Dreams

During my first week as an official full-time employee at Amazon this quote seems especially relevant, mostly because of the overwhelming awesomeness that I get to be a full-time part of such a cool company. Some times it just seems too good to be true! Same team, new manager, new projects, and new (strategic) role... Cary's comment tonight says it all... "I know you're still working long hours, but you seem happier than ever before."

Guest Room Refresh

We're very excited to have overnight guests (the first in quite some time) visiting us this week! Even if it's only for a night, as a pitstop to the airport, we used the opportunity to spruce up the guest bedroom a bit. Hopefully we'll have a few more guests passing through this summer to enjoy the updates :)

The Gardner Hut

Surprise activity number three: staying at the Gardner Hut! This adorable mini-cabin has no running water or electricity, an all wood interior, and incredible views of the Methow Valley. I couldn't have imagined a more perfect place for an anniversary getaway! We were hoping to do a loop of the single-track mountain biking trail that started literally feet away from our door, but due to our extreme saddle-soreness (dang you horseback riding!) we spent most of our time soaking up the sun while reading.

Part of me wants to go out and build a cabin just like the Gardner Hut for ourselves right now, I mean come on, can you get any more charming? I love the idea of a minimalistic getaway spot in the middle of nowhere, far more luxurious than a tent, but still simple enough to cook and light with a small propane tank. (Cary and I actually semi-broke the cool propane-powered lights while we there, and ended up playing cards by candlelight, swoon!) For now though, it's awesome to be …

Winthrop, WA

Surprise activity number two: touring around the adorable little downtown of Winthrop. A real "western town" (most buildings have been there since the late 1800s), it was fun to explore the cute shops, admire the copious amounts of hand painted signage, and enjoy some good old fashioned waffle cones.

Methow Valley, WA

Surprise activity number one: horseback riding at Sun Mountain Lodge. What a romantic idea (and hilarious actuality) to see Cary ride a horse for the first time :) We couldn't have picked a more gorgeous day to ride through the hills of the Methow Valley.

Diablo Lake, WA

Even the drive to our surprise getaway was fantastic, the ideal 3 hours of Washington scenery to watch whiz by. I can't believe places like Diablo Lake really exist, until now I was pretty sure lakes like that were photoshoppped.
